FRESH NECTARINE AND BLUEBERRY TART

Hiiiiiiiiiiii…….

I’m back with more blueberry inspired treats! This time I’m pairing them with nectarines- one of my personal favorites!

This evening, after dinner, we did a little mother and son bonding in the kitchen. My son is officially in boy-man stage and he wants to be prepared for “real life”- aka college. That means knowing how to cook and bake. So far we’ve kept it simple with his favorite pasta, pancakes and waffles. Now, we’re moving on to dessert.

This summer tart comes together in about 30 minutes from start to finish (if you’ve thawed your puff pasty in the fridge overnight).

You’ll need:

baking sheet lined with parchment

3 nectarines

handful of blueberries

puff pastry sheet

Granulated Sugar

Cornstarch

Cinnamon OR Lemon Zest

Powdered Sugar

Vanilla Extract OR Lemon juice

Egg

TIP: I have listed cinnamon or lemon above. For a bright flavor use lemon. For a warmer flavor use cinnamon and vanilla.

FRESH NECTARINE AND BLUEBERRY TART

makes one large tart serves 6-8 |

INGREDIENTS:

  • 1 puff pastry sheet, thawed

  • 3 Nectarines, rinsed, halved and thinly sliced

  • 1/4 Cup or handful of blueberries, rinsed

  • 3 tablespoons granulated sugar

  • 1 tsp cornstarch

  • a dash or cinnamon or zest of half a lemon

Egg Wash:

  • 1 egg

  • 1 tablespoon water

Sugar Glaze:

  • 1 C powdered sugar

  • 2 tablespoons heavy cream

  • 1 tablespoon water ( add 1/4 teaspoon at a time to reach desired consistency

  • 1/2 teaspoon vanilla extract or juice of one Lemon wedge.

TIP: I have listed cinnamon or lemon above. For a bright flavor use lemon. For a warmer flavor use cinnamon and vanilla.

METHOD:

1. Preheat your oven to 400  degrees Fahrenheit.

2. Line your Baking sheet with parchment and center the thawed puff pastry on top. Repair any tears by lightly wetting your fingers and pressing tears together.

3. In a small bowl, whisk together egg and water. Brush egg wash around the outer edge of the puff pastry.

4. In a small bowl, combine granulated sugar, cornstarch, and cinnamon OR lemon zest.

5. Placed the sliced nectarines in a large bowl and pour sugar mixture on top. Make sure all pieces are well covered.

6. Arrange nectarines on puff pastry leaving roughly a 1-2” border all around. Scatter blueberries on top. Bake for 18-20 minutes or until pastry is golden brown.

7. Let cool for about 10 minutes. Whisk together the powdered sugar, cream, water, and vanilla OR lemon juice. Pour glaze over tart.

Enjoy immediately.
