BLUEBERRY GALETTE

Today was a late meeting/ late dinner/ late dessert kind of day. Galettes are quick and easy to pull together with very little fuss and minimal ingredients. This recipe can be adapted by using fresh or frozen berries of any kind. You can also add sliced stone fruit (like peaches, nectarines or plums) for some added texture and variety.
Here’s what you’ll need:
Homemade or store bought pie crust
Fresh or frozen blueberries
Granulated white sugar
Cinnamon
Flour
cornstarch
Egg wash or Heavy Cream (optional)

BLUEBERRY GALETTE
(Serves 4-6)
INGREDIENTS:
1 pie crust
2 1/2-3 cups fresh or frozen blueberries (do not thaw)
1/2 cup granulated white sugar
1/2 teaspoon cinnamon
2 tablespoons all purpose flour
1 teaspoon cornstarch
METHOD:
1. Preheat oven 375F. Line a baking sheet with parchment.
2. In a bowl mix berries, sugar, cinnamon, flour and cornstarch. Set aside.
3. Roll out a thawed pie crust to a 12-14” circle. Place on parchment. Place berry mixture in center, leaving two inches of pie pastry around the edge.
4. Fold pie crust up and around berries. Optional: Brush pastry with heavy cream or egg wash (one egg + 1 teaspoon water, whisked) & sprinkle with raw sugar.
5. Bake 45-60 minutes or until pastry is golden brown. Let cool 5-10 minutes. Serve warm.
Serve plain or dusted with powdered sugar. You can also serve with whipped cream or vanilla ice cream.
