So things got a little sketchy last week. We ran out of French Onion Soup Mix…..hahahaha. What you have to understand is that my husband and youngest son are ADDICTED to their tiny nightly snack of French Onion Dip!

So, know what I did…? Just made some from scratch. It was EASY. It was way way WAY better than the store bought stuff. Also, pro tip, it’s even better the next day.

If you’re Gluten free, or on keto- this is a great snack! Just pair it with the right crackers or cut veggies and you’re good to go.

FRENCH ONION DIP [GLUTEN FREE, KETO]

| Makes about 1 1/2 Cups |

INGREDIENTS:

  • 1 large yellow onion, thinly sliced

  • 2 tablespoons butter

  • 1 Tablespoon extra virgin olive oil

  • pinch salt

  • pinch of pepper

  • pinch of sugar

  • 1 1/2 Cups sour cream

  • 2 heaping tablespoons mayonnaise

  • 2 tablespoons minced chives

  • 1/2- 3/4 teaspoon salt

  • 1/2 teaspoon pepper

METHOD:

  1. Start by carmelizing onions. Melt the butter in a non stick skillet with the olive oil. Add the thinly sliced onions, pinches of salt and pepper. Take you time and cook on low heat and slowly until the onions are soft, cooked through, and begin to soften and turn golden. If the onions dry out during this cooking time, add a teaspoon of water at a time, as needed. Once the onions turn golden, add a pinch of sugar (optional) to finish the carmelizing process. Carmelizing the onions can take anywhere from 20-30 minutes. Remember to cook slow on low!

  2. in a bowl, combine the sour cream, mayonnaise, chives, cooled onions, salt and pepper.

    For best flavor, let flavors meld for a few hours before serving. Overnight is best.
