FRESH PEACH TARTS

For anyone following along, you may have noticed I’ve been absent for a bit. I tend to fall off blogging in the summer months. When summer rolls around I am OUTSIDE all the time. Seeing as most of us have been working from home since March, in some shape or form, I’ve really taken to shutting down my computer after work & heading straight out to the deck.
Today I’m mentally preparing for Fall, and getting back into my blogging groove with these extra simple & totally delish fresh peach tarts. Ready in about 30 minutes!
Here’s what you’ll need:
store bought frozen puff pastry, thawed overnight in the refrigerator. (For a Vegan option, try Peppridge Farms frozen puff pastry sheets.)
2 fresh large peaches
granulated sugar
corn starch
1/4 fresh lemon
egg (optional)

FRESH PEACH TARTS
(Makes 12 individual tarts, serves 4-6)
INGREDIENTS:
thawed puff pastry, divided into 12 equal squares (you’ll have about 6 individual squares left over. Store these in the freezer for later, or add another peach and make 18!)
2 fresh, ripe peaches
3 tablespoons granulated sugar
1 teaspoon cornstarch
Juice of 1/4 lemon
Note: if you’d like to make more than a dozen, or less than a dozen, keep this simple formula in mind- for every peach, you need 1 1/2 tablespoons granulated sugar + 1/2 teaspoon of cornstarch. Easy!
METHOD:
1. Preheat oven 425F
2. Divide puff pastry into 12 equal parts and place on baking sheet lined with parchment. Optional: whisk one egg and one teaspoon water in a small bowl to use as egg wash.
3. Cut peaches in half, remove stone pit, and slice into consistent 1/4” slices. Mix peaches, sugar, cornstarch and lemon juice in a bowl.
4. Optional: brush egg wash around edges of each individual pastry square. Place 2-3 slices of peach mixture on each pastry square.
5. Bake 15-18 minutes or until pastry is golden brown. Serve plain, dusted with powdered sugar, drizzled with honey, or a simple glaze (4 tablespoons powdered sugar + 1 teaspoon cold water). Serve warm.
