KEY LIME PIE BOMBS [WHOLE 30, PALEO, GLUTEN FREE, VEGAN]

I guess I should take it as a compliment when my kids steal my treats... When I make these delightful bombs of lime and coconut goodness, I make enough for E V E R Y O N E !! So why why why do they go into my stash and STEAL them!! I mean, it only takes 15 minutes to make quite a few so all they have to do is ask for more….but I digress…the point is that everyone loves them. It’s a toss up between these and the Chocolate Coconut Magic. I guess it depends on your mood. Either you want something rich and delicious OR you want this tangy and hearty snack. Who knows? All I know is my kids call these “the healthy candies” so I’ll take that as a win!

 

You will find that these suckers are painfully easy to make. You literally just blitz the ingredients in your food processor and then roll them up & roll them in shredded coconut (totally optional). Start to finish it takes about fifteen minutes and make about 20-24 hearty little protein snacks. They are AWESOME for our Whole30, Paleo, Vegan, and Gluten Free friends!

KEY LIME PIE BOMBS [WHOLE 30, PALEO, GLUTEN FREE, VEGAN]

| Makes 20-24 |

INGREDIENTS:

  • 1/2 Cup Whole Almonds (Raw)

  • 1/3 Cup Cashews (Raw)

  • 1/2 Cup unsweetened shredded coconut + more for rolling

  • 1 1/2 Cups pitted Medjool Dates

  • zest and juice from 3 limes- or key limes if you can find them!

METHOD:

1. Place all the ingredients in a food processor. Pulse about 15-20 times to grind the nuts initially. Then process until the mixture comes together- it will come together in under a minute,

2. Carefully remove the blade and roll Nut mixture into balls, about 1 tablespoon at a time. Then, roll into shredded coconut if desired. Keep refrigerated in an air tight container for up to one week.

TIPS:
* you will find that Cashews and Pecans have a smoother and creamier texture than Almonds or Walnuts. I like a gritty/ rustic texture so I used Almonds. For a smoother texture I suggest you use Cashews and Pecans. It simply comes down to personal preference on texture!
