STRAIGHT UP HOT CHOCOLATE [GLUTEN FREE]

It’s the day after Christmas and I am having a deliciously lazy day!! I spent the last four days cooking, baking, and prepping so today feels especially well deserved. But for anyone who knows me, I cannot simply do NOTHING. By deliciously lazy, I mean that I have put in a load of laundry, unloaded the dishwasher, and did a quick sweep on my kitchen floor. While I was there, I decided to make a little treat for the boys.
I know, I know, I could have TOTALLY gone for the powdered hot chocolate packets- but I wanted to make a special treat. Frankly, when I busted out the dark Valrhona chocolate I was scared they wouldn't like it and it’d all go to waste. But GUESSS WHAT? They LOOOOOVED it. It’s a super rich indulgence and tastes nothing like the powdered stuff. So my friends I call this a success!!
There are all kinds of stove top versions of this- but seriously…WHY? you can absolutely do this in the microwave. I just used my 4 Cup Pyrex and called it good. The best part about this is you can scale this recipe down for one or two people very easily. I would just like to call out that it will effect your heating times on the milk. Obviously, less milk will take less time to heat and you really don’t to overheat your milk. Gross! You want to get the milk scalding hot- just before it starts to boil.
STRAIGHT UP HOT CHOCOLATE [GLUTEN FREE]

INGREDIENTS:
4 cups Milk of choice (I used 3 Cups Whole milk + 1 Cup Heavy Cream)
7 ounces (2 bars) Valrhona 71% Chocolate- chopped
METHOD:
1. Pour Milk into 4 Cup Pyrex measuring cup. Place in microwave and heat until scalding- not boiling, About 3-4 minutes depending on your microwaves power.
2. Add the chopped chocolate to the hot milk and let sit for at least 30 seconds to 1 minute.
3. Whisk. Pour into mugs. Enjoy!
